Champagne Bolognese


3 yellow onions chopped

6 celery stalks chopped
3 carrots chopped

3lbs. ground
(don't use fancy beef)
1/2 cup olive oil

1/4 lb butter

3 cans chopped
Italian tomatoes
(buy them that way)
1 can tomato paste

2 cups champagne

1 and 1/2 cups milk

2 tsp salt

2 tsp black pepper
1/2 tsp cinnamon


combine oil and butter and heat
to medium
saute chopped onion until clear (not brown)

add carrot and celery and saute until soft
add chopped basil and stir

add salt and pepper and stir
add ground beef and cook
just until rawness is gone

turn heat to
medium high

add champagne

stir occasionally and cook until evaporated
(takes about 20 minutes or more)

turn heat to
add milk

stir occasionally and cook until evaporated
(takes another 15 minutes or more)
add Italian Tomatoes

add tomato paste and one can of water and stir
when bubbling, turn down to lowest simmer

add cinnamon and stir in
(this is the magic)

simmer for at least two hours……………three is better (makes the house smell good)
